perfect new year's breakfast ... number shaped pretzels and salmon-egg-tomato-spread

...a good start into the new year can never hurt, even it only starts with a delicious breakfast.

homemade lye bread does not only have to be shaped like a brezel, it works out really well with other shapes...even with numbers.

it does not even take much longer than shaping it into bread rolls, and for sure it is easier than shaping it into pretzels.

...the delicious salmon-egg-tomato-spread is easily done, too...what else do we want for a perfect breakfast.


unfortunately right after my new year's breakfast a new year's working day had to follow,so my new year's wishes come with a little delay...nevertheless from the bottom of my heart.

with this in mind...i wish all of you the very best for the new year and may all most of, if not all of your dreams come true.









this is what you need for the brezel-numbers



- 500g flour

- 2 tsp salt

- 20g fresh yeast

- 15g butter

- 290ml lukewarm water

- 45g baking soda

- 1 liter water


this is what you need


- mix all ingredients and knead the dogh with a powerful kitchen mixer
  (thermomix 3 min dough speed)

- seperate the dough into evenly sized balls and form brezels, letters, numbers or bread rolls

- bring 1 liter of water to boil and dissolve the baking soda

- lower the temperature and leave the pan on the stove

- as soon as the water does not boil anymore, but while the water is still hot, place the brezels, or bread rolls into the solution and leave it for 30 seconds

- it did not dear to move my numbers and covered them with the solution and a brush a few times

- preheat your oven to 190 degree celcius

- place the treated bread onto parchement paper and sprinkle with coare salt

- you may want to wish to cut the bread, where you want it to open up during baking.

- bake for 20 to 30 minutes

- enjoy





this is what you need for the salmon-egg.tomato-spread



- 2 boiled eggs

- 2-3 branchlets basil

- 3-4 dried tomatoes

- 2-3 tbsp smoked salmon

- 1 cup cream cheese


this is what you have to do



- chop eggs, basil and dried tomatoes

- cut salmon into small pieces, add to the aother ingredients and mix with the cream cheese

- salt to taste

- enjoy with the homemade brezel bread
